This dressing goes well with any salad that includes seafood, particularly grilled salmon. You can also use it as a dip for tortilla chips, just like guacamole itself.
Whisk together in a medium bowl:
1/4 cup fresh lime juice
1/4 cup finely chopped fresh cilantro or fresh parsley
2 teaspoons ground cumin
1 teaspoon minced garlic
1 teaspoon minced fresh chili peppers
Add in a slow, steady stream, whisking constantly, until smooth:
1/2 cup olive oil
Stir in:
2 avocados, peeled and finely diced
1 medium, ripe tomato finely diced
Salt and cracked black peppercorns to taste
Taste and adjust the seasonings. Use immediately or cover and refrigerate.
